TYPE OF SOIL: Red iron soil with a layer of limestone rock underneath
BREEDING SYSTEM: A small tree of about 70 years old
VINES PER HECTARE: 7,000
PRODUCTION PER HECTARE: 20/30 HL
HARVEST: Manual harvest of the grapes in crates in the first/second week of September
MACERATION: For 4 weeks
FERMENTATION: In stainless steel tanks for 4 weeks at a temperature of 25°C
REFINEMENT: 24 months in stainless steel tanks and one year in bottle
ALCOHOL CONTENT: 16% vol.
SUGAR RESIDUE: 4 GR/LT

TASTING NOTES

I WAIT: Deep ruby red with purple reflections
PERFUME: Elegant aromas of small black fruits (blackberry, red mulberry, black cherry and “ferrovia” cherry) and delicate floral notes (violet), on a background of aromatic herbs, liquorice and graphite
TASTE: It bursts onto the palate with a long finish and stunning aftertaste. Supported by excellent tannins. A rich and long finish.
