GRAPE GATHERING: Handy harvest in boxes, during the last week of August / first week of September
VINIFICATION: soft pressing and brief maceration in the press. Second fermentation in bottles. Each bottle rests minimum 36 months sheltered from light, drafts and knocks, at controlled temperature, in our cellar, in deep contact with yeasts. The degorgement is made by hand at cold.
ALCOHOL CONTENT: 11% vol.
SIGHT: brilliant pink in color and fine perlage
NOSE: delicate nose rich in nuances, with flavours of rose, cherries, raspberry, pastry and pink grapefruit
PALATE: Delicate and harmonious, with a great body and a pleasant citrus freshness
FOOD PAIRING: perfect with salami, semi hard cheese, eggplant parmigiana, fish soups, tomato pasta and white meats.
